Avocado and Salmon Crepe

About the Recipe

Ingredients

  • 125g plain flour

  • 300ml milk alternative

  • 1 tbsp vegetable oil

  • 1 ripe avocado

  • 2-3 slices smoked salmon

Preparation

  1. Tip flour into a large bowll and make a well in the centre.  Gradually add in the milk, stirring to make  a smooth thin batter.

  2. Heat 1 tbsp of vegetable oil into a small non-stick frying pan.

  3. Pour a large tablespoon of mixture into the pan, swirling the pan to make crepe about 12cm across. Cook for around 1minute until the crepe has turned creamy coloured, flip over and cook for a further minute until golden.  Slide onto a plate and continue cooking the rest of the pancakes.

  4. Mash up the avocado

  5. Cover each crepe with small piece of smoked salmon, top with avocado

  6. Roll up and serve
