200g self raising flour
1 tsp baking powder
25g melted butter
oil for cooking
1 apple grated
1 carrot, grated
Mix 200g self raising flour, and 1 tsp baking powder together in a bowl
create well in centre of mixture
Whisk milk and butter together. Gradually add in 3 eggs
Whisk together butter mixture and flour mixture until smooth.
Heat a small amount of butter in a large, non-stick frying pan over a medium heat. When the butter is frothy pour in rounds approx 8cm wide of the batter
Mix cream cheese and icing sugar together to create frosting. Add grated carrots if desired.
Serve pancakes stacked on plate with frosting in between pancakes and add your favourite toppings.
