Carrot and Apple Pancakes

About the Recipe


  • 200g self raising flour

  • 1 tsp baking powder

  • 3 eggs

  • 25g melted butter

  • 200ml milk

  • oil for cooking

  • 1 apple grated

  • 1 carrot, grated


  1. Mix 200g self raising flour, and 1 tsp baking powder together in a bowl

  2. create well in centre of mixture 

  3. Whisk milk and butter together.  Gradually add in 3 eggs

  4. Whisk together butter mixture and flour mixture until smooth.

  5. Heat a small amount of butter in a large, non-stick frying pan over a medium heat.  When the butter is frothy pour in rounds approx 8cm wide of the batter

  6. Mix cream cheese and icing sugar together to create frosting.  Add grated carrots if desired.

  7. Serve pancakes stacked on plate with frosting in between pancakes and add your favourite toppings.
