Veg Packed Chicken Casserole

About the Recipe


  • 1 tsp vegetable oil

  • 200g diced chicken

  • 1 clove garlic, crushed

  • 1 onion, chopped

  • 200g mixed vegetables, chopped - I used, pease, carrot and green beans

  • 2 tbsp tinned tomatos

  • 260ml full cream milk or milk alternative for DF option

  • 2 tsp cornflour


  1. Pre-heat oven to 180'C or gas mark 4

  2. Heat oil in a saucepan, add chicken and cook till browned

  3. Add garlic and onion and cook till soft

  4. Add choped vegetables and stir

  5. Add tomato

  6. Seperately mix the cornflour with the milk and stir into the saucepan with the chicken mixture

  7. Trasnfer to a casserole dish and cook for 1 hour

  8. Serve with mash potato or rice
